Resolution In The Bread
I have never before in my life baked bread, so I tried this to do something new for the new year. I think there’s something in this. I could meet all my resolutions before I’ve actually written them. Kind of like those annual appraisals you do in the office.
This is rye bread which I really like. The bottle is there for scale rather than for show.

I have never baked bread, but I like rye too.
Especially buried under mountains of salt beef or pastrami.

I’ve always preferred the whole grains to the split grains. Unless it’s peanut butter sandwiches we’re talking about .

I mean, I’d like some bread, not that I was dense and had charcter. Everyone knows I have no character.

A friend of mine makes a similar bread. It, too, is a bit dense. So much so that I ate a slice and it sat in my stomach like a brick. Otherwise it tasted great. Is there no way to make it light and fluffy?

Sorry DiB - rye bread doesn’t rise. The loaf weighs a ton though. You have to use sparingly and with a light cheese like feta, mozzarella or dolcelatte.

I like heavy breads - it’s the German in me.
Spread it with cream cheese and put some grapes or strawberries or cherry tomatoes and black pepper on top.
Rye bread is also good if you’ve got a watery broth, some cold meats or toasted and buttered with an egg on top.

Rye, dark and heavy, slightly fruity with a dollop of cheese.
Just like my sense of humour.

I think most homemade breads are dense Cliff. Something to do with science and yeast and all that kneading stuff… Looks good though.

Plus the fact that bread manufacturers use excessive amounts of yeast and emulsifiers to create bread-like substances that trap an incredible amount of air and are quite bad for you.
