true dat. the yeast i have is technically past its expiration date, but i keep it in the fridge so i figured why not just use it. so, i suspect the yeast. also, i meant to mention, they came out more fluffy and less dense and, uh, bagel-ly than i was expecting. but they really are delish, so thank you for sharing the recipe. it won't be the last time i make them, that's for certain.

I saw a picture of Brave Kylie at work today. I used to work near where she lived, and she looks much braver in real life.

Peach - will do. What's my cut, 20 per cent? Only joking. Ten.

Franko - Thanks for popping by and welcome. That's you and Wendy rocking the bagels so far. They rise a little more if you leave them in a warm place and you make sure the water is boiling fully when they go in. Could be your yeast, though, or even your water. Any way, at least you know they are all natural, with no emulsifiers or egg powders or everything.

completely off-topic, i thought i'd pop in and say that i made your bagel recipe this past weekend, and while they were a little on the flat side (my yeast may have been a bit tired, who knows), they are divine. thank you!

That's the one. "Granny-grabbing Wayne Rooney" springs to mind as well. I should start putting a list together.
